May be you can select some of the modern Arabic and Islamic literature and translate it to English  and highlight the islamic prespective in it. Or you can choose from modern English literature things that speak about the nature and express during the explination the idea of Oneness of Allah as the creater and the beauty and the unity of Allah creation.
