Should we eat food if expired? Is there any food safety concern? if so how?

In some countries, the food authorities are disposing a lot food of good quality just because of expiration date. I don't know that in how many cases it is verified that food after expiration is unsafe for human consumption. Please share your opinion. I would be glad to have a link to some publications.
