How can you improve food safety parameters with old and non educated employees in a very old food industry?

you should try to use simple world and simple vocabulary to make them understand the fact and the way they should act also try to exaggerate whil describing some problem such us infexion if not washing hands very well it will lead to many sikness ...  try also to make seminair for them to teach them some information about bacteries and smear and problems leaing to food contamination for me i used photos showing a kid eating from the contaminated product who became sick, those women working in cleaning  will feel sorry for him and her you can touch their feeling since they can't imagin how serious the issue could be 

Don't forget remunerations it's important even if it's moral it motivates employees

Continuous training, use simple training methods like pictures.Be a good guidance.Be a demonstrator.

i can understand the situation you are in.first thing we have to know is that the current employees are in a comfort zone of their work. no restriction and they are experienced in their position if i am right. what we are trying to implement is a system with restrictions. so there definitely will be resistance to change.i support the previous answer and the pictorial as well as video will help them to understand the scenario. training them in a way that will inspire them and most of all creating a will to change from existing . hope it is helpful.practices to good manufacturing practices.

If employees are motivated to save their workplace, you should train them and check them if they are complying with the rules. Otherwise you should come up with a way to motivate them and then start the trainings.

Media presentation, visual aids, demonstration, rigid training can help to improve their awareness in  food safety and to learn  why it's  crucial in food business.

The solution to the problem only can be solved through effective training not only training the training needs to be provided through presentation which includes only pictorial evidence and videos as well. All training material should be in local language for workers to understand includes common examples.

I support the answers mentioned by both of the experts.

Just to add on, I would like to say that, in order to train old and uneducated employees, you need to use easiest mode of communication, audio-visual presentation,easy to understand language, etc.

Try to relate the food safety issues with the practical life & tell them about the hazards that they can face if they will consume the unsafe food. Tell them the importance of food safety in their life.

Keep them motivated, always keep praising them by saying that whatever they are doing presently is wonderful job, however it can be improved to other level by making small efforts & understanding new things.

Keep them realizing that they are essential part of the system and food safety objectives can be achieved only by team work.

You can also start recognition or incentive scheme to promote food safety culture among them. e.g. you can give some gifts on giving any idea that can improve the food safety system.
