How can we do A/B testing when we cant do much changes on the website?

There are still ways to do A/B testing such as using Heat Maps or other various tools that can help make the user experience much more better and efficient. If everything is indeed perfect then obviously A/B testing is not necessary but its still good to play around to see if things can be further improved, if not, then don't fix what is not broken.
