What will we do to change color of image in illustrator?

first type hatch in command lineand then

change the color in the "swatch" on the "type and pattern"

Just open the image with Adobe Illustrator, then click the image to show the image trace, beside of image trace there is down arrow tool click it to show the options either3,6,16 colors or highfidelity.
