The first one is false,the second is correct because the question is about the mall and the mall is one entity.
in my personal thoughts the two sentences are grammatically wrong , it's better to rephrase the question with " Do you know which days the mall opens?.d
I think that the question is about the place so the second sentence is right . What days is the mall open .?
The second. But I would say it like this: When is the mall open?
what days are the mall (open)
what days are the mall opens or opened << correct

what days (is) the mall (open)
what days are the mall opens or opened << correct

In my humble opinion both questions are wrong. The pair "What" & "Which" is one of the confusing pairs of words in the English Language. If you knew about the exact meaning of these two confusing words it is easy to correct it.
The correct sentence is :
Which days is the Mall open?
NB: (which is used here to choose a day or days from seven days)
"WHICH" is used in questions to ask somebody to be exact about one or more people to things from a limited number. (i.e. to choose from a variety)
Which is your toothbrush?
Which of the following sentences is true?
Which is cardio exercise cycling or swimming?
Which days is the Mall open?
"WHAT" is used to ask for particular information about somebody or something.
for example:
What happened last night?
What is going on here?
What does it mean?

Simply, and without referring to strict grammar rules: "Is" not "Are" seems correct as it agrees with the noun "Mall", which is singular.
