I've started by MEP ,then HVAC, and then Power plants. Sharif is right. you may find job easier as a HVAC (or MEP) specialist. But I would like to draw your attention to the fact that power plant projects, generally could include HVAC and MEP too, because they include different buildings such as control room, canteen, residential buildings,...

Additionally, in power plant projects you could promote to higher positions/wedges as a specialist in some more complicated systems/equipment/projects.

And at all, it is better to look at your interest and consider the condition of country you would like to work in. :)

HVAC is the best feild for fresh mechanical engineering graduates to start his career.

In this field opportunities is more and the fresh engineer can work under the experience engineer fallows the approved shop drawings,and can learn the other MEP services at the same time and project.

MEP SERVICES FOR RESIDENTIAL , COMMERCILA & INDUSTRIAL PROJECTS 

If the answer is to be only from above provided options then HVAC.

THE BEST FIELD IS GAS PRODUCTION ,OR TREATEMENT .MANY LOOPS TO ASSURE BEST AREA TO HAVE A GOOD EXPERIANCE.

The best field for fresh mech. eng. is depending on many factors, let us take your suggestions one by one:

1- HVAC: very good field especially for gulf area, i suggest to start with design for two years

2- MEP : very good field especially when you have an experience of mech. & elec.

3- Power Plant: from my point of view, the most intresting two years in my live was at the power plants projects

finally, do what you like to do and be where you want to be
