Can rancidity occur in ready- to eat fresh meals?

Yes, Rancidity do occur in ready to eat fresh meals like wapers , french fries if the product is packed hot and the oil used has High PV. Have found it practically in case of fried snacks -Bhujia & namkeens. Fried nut cracker's do get rancid-Peanut , cashew and almonds.It is due to Rise in Peroxide value due to exposure to Moisture, oxygen and light. This is why snacks packed in coloured pouches have more shelflife than transparent pouches. Dry fruits often available in market are rancid but we hardly notice it.
