First of all, it is collar, not color.

In many countries of the Western Hemisphere, a white-collar worker is a person who performs professional, managerial, or administrative work.

Blue-collar work may involve skilled or unskilled manufacturing, mining, sanitation, custodian work, oil field, construction, mechanical, maintenance, technical installation and many other types of physical work. Often something is physically being built or maintained.
