Go for Vmware Esxi5.1 and if you are interested in studying more then go for some course in Storage like SAN.

what is Linux System Admin1&2 certified? Makes no sense to me, but I would highly encourage you to take a Red Hat System Admin certification; that would pretty appeal to all Linux hirers but I would also suggest you to take a UNIX exam; like IBM's Certified Operator - AIX6.1 Basic Operations.
Personally of all the UNIX systems I have come across I love AIX the best, its so damn easy to use and I can't recommend it enough
