1. Learn everybody's names and every corner of the premises

2. Work hard

3. You are supposed to be in charge, so take control

4. As always, be open, honest, consistent and fair

5. You have a lot to learn about how this restaurant works: learn it fast

6. Don't be afraid to make changes early, but make them right

7. In other words, get your hands dirty

 

Don''t think about customer service for the first week or two unless it is a major problem - you have enough to do.

Do not attempt to make the staff loyal.  If you deserve their loyalty, you will earn it.
