You can use Windows Server Backup to back up and restore your Exchange databases with Windows2008.

Windows Server Backup with VSS can be used. Or else an Exchange aware backup utility like Symantec Backup Exec can be used. Make sure you flush the log files after a successful backup. If you want to do a full system backup do a BMB backup at first and do incremental afterwards to suit your need.

default  windows server backup utility ... or try acronics backup and restore for exchange server , advantage of Using acronis is using universl restore u can restore it to a different hardware also ..

You can use Windows Server Backup, or Microsoft Data protection Manager, Symantec Backup Exec ... there are too many backup solutions available in the market...
