Seasoned professionals get more attention than college degree by employers. Why?

In western world seasoned professionals are more favorite than degree holders. Say for example- a quick book expert is more proficient than a bookkepper Accountant holded Graduation or Masters in Accounting. Overall cases in corporate environment Graduation or Masters for planing and managerial decission making is ideal. Seasoned professional a like a tecnician. See an infant baby still out of education may use andriod or iPhone more quicker than me... but don't know the A B C B 123 .....that's not a magic... so far... alike.
